Ingredients

  • 1 sweet potato, peeled and cut into julienne strips
  • 1 tablespoon extra-virgin olive oil
  • Pinch of cayenne pepper
  • Pinch of cinnamon

Directions

Preheat oven to 375°F (190°C).

Add the potato strips into a large bowl and drizzle with extra virgin olive oil and sprinkle with cayenne pepper and cinnamon; toss to coat well and then spread evenly onto a cookie sheet. Bake for about 30 minutes, stirring every 10 minutes, until crispy.

Eat as a snack, salad topper or atop soup and many other side dishes.
