Full of protein, fiber, B vitamins and essential minerals, this tasty whole grain and legume salad is easy to prepare and a remarkably healthy food source.

Ingredients

  • 4 mixed cups of cooked grains or beans such as quinoa, bulgur, wheatberries, white beans, or black-eyed peas
  • 3 cups raw or cooked vegetables of your choice
  • 1/2 cup extras like roasted almonds, chopped pecans, pumpkin seeds, dried dates, dried apricots, grated Parmesan cheese, olives
  • 1/4 cup fresh chopped herbs, such as, parsley, cilantro, or mint
  • 1/3 cup Sherry Vinaigrette or Lemon-Mustard Vinaigrette

Method

Combine all the ingredients in a large bowl and mix well. Just before serving, add the dressing and toss to coat. If you haven’t had your daily serving of nuts and seeds, why not sprinkle on top for a crunchy topping!
