Healthy Frittata with Red Onions, Spinach & Smoked Salmon

This low-carb healthy frittata is a simple way to make a nutritious and delicious egg dish that is versatile, healthy and ready in minutes.

Salmon Frittata Recipe

Ingredients

  • 2 teaspoons extra-virgin olive oil
  • 6 red onions, trimmed and chopped
  • 4 large eggs
  • 6 large egg whites
  • 3 cups chopped spinach
  • ½ teaspoon finely chopped fresh tarragon
  • ¼ cup water
  • ½ teaspoon salt
  • 2 ounces smoked salmon, sliced into small pieces
  • 2 tablespoons black olive tapenade

Directions

Preheat your oven to 350°F (177°C).

Set a large ovenproof pan over medium heat; add oil and heat until hot, but not smoky. Stir in red onions and sauté, stirring, for about 3 minutes or until tender and fragrant.

In a bowl, beat together eggs, egg whites, spinach, tarragon, water, and salt; season with black pepper and pour into the pan.  Arrange the salmon onto the egg mixture. Cook, stirring frequently, for about 2 minutes or until almost set; transfer to the oven and cook for about 14 minutes or until puffed and golden.  Remove the frittata from the oven and transfer to a serving plate; slice and serve with tapenade.
