Healthy Stuffed Chicken
These stuffed chicken breasts pack nutrient-rich ingredients into a simple and quick dish that makes chicken desirable again! Everyone will love them!

Ingredients
- 4 chicken breasts
- 1 cup parsley, chopped
- 1 teaspoon lemon juice
- 1 clove garlic, chopped
- ½ cup pine nuts
- ½ cup sun dried tomatoes
- ¼ teaspoon sea salt
- ¼ cup extra virgin olive oil
Directions
Prepare the chicken for stuffing by slicing two thick chicken breasts in half; beat the four chicken pieces until wide and thin.
Pulse parsley in a food processor until well chopped.
Add lemon juice, garlic, pine nuts, sundried tomatoes and salt and continue pulsing until smooth.
Add extra virgin olive oil and pulse to blend well.
Spread the mixture onto each chicken piece, fold to enclose the filling and secure with a toothpick. Bake at 350°F (177°C) for about 30 minutes.
