Minty Date Ice Cream
This ice cream recipe is so delicious, yet very healthy. You’ll never believe it’s ice cream!
Yield: 4 Servings (1/2 cup per serving)

Ingredients
- 4 organic dates, pitted
- 1 cup reduced fat cottage cheese
- ½ tsp vanilla flavored stevia extract
- 2 teaspoon peppermint extract
- 1 teaspoon sea salt
- 1 cup macadamia nuts
- ¼ cup dark chocolate chips
Directions
Mix all ingredients, except chocolate chips and macadamia nuts, in a blender and blend until very smooth. Add the chocolate chips and nuts and blend until chopped into small pieces.
Scoop the mixture into a chilled bowl and freeze for 3 hours, stirring every 30 minutes until it attains a firm consistency.
Serve in individual bowls and enjoy!
