Shrimp and Sausage Creole Stew

Ingredients

  • 6 oz. bacon, fat removed
  • 1 tbsp. coconut oil
  • 1/2 large red onion, chopped
  • 4 cloves chopped garlic, chopped
  • 1 stalk celery, chopped
  • 1 bell pepper, chopped
  • 1/2 lb. smoked sausage, cut into ½-inch pieces
  • 1 1/2 cups homemade chicken stock
  • 4 cups chopped fresh tomatoes
  • 1/2 tsp. black pepper
  • 1/2 tsp. red pepper flakes
  • 5 lb. shrimp, deveined
  • Cajun Seasoning
  • Salt
  • Chopped parsley

Directions

In a large Dutch oven, cook bacon until crispy.

Melted coconut oil in a pot and sauté onion, garlic, celery, and pepper for about 10 minutes or until tender. Stir in the remaining ingredients, except shrimp, and cook, covered for about 20 minutes. Add in shrimp and cook for about 3 minutes. Adjust the seasoning and serve garnished with parsley.
