Chewy Chocolate Chip Cookies

This recipe for chewy chocolate chip cookies makes enough to keep your tins filled for a week. They are ultra-thick, soft, and very moist.

Ingredients 

  • 3/4 cup oat flour
  • 1/4 cup raw cacao powder
  • 3/4 cup vanilla protein powder
  • 1 tsp. baking soda
  • 1/4 tsp. sea salt
  • 3 tbsp. melted coconut oil
  • 1/3 cup applesauce
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 tsp. stevia 
  • 1/2 cup dark chocolate chips

Directions

Preheat oven to 350˚F (177°C). Line 2 baking trays with parchment paper; set aside.

In a bowl, mix together flour, cacao powder, protein powder, baking soda, and sea salt until well combined.

In a separate bowl, whisk together coconut oil, apple sauce, egg, vanilla extract, and stevia until well blended; pour into the dry ingredients until well blended; fold in the chocolate chips and refrigerate the batter for about 1 hour.

Roll the batter into one-tablespoon sized balls and arrange them on baking trays; bake for about 10 minutes or until the cookies are puffed up.

Remove from oven and let cool completely before serving.
